Is there documentation specifically regarding this plugin? I've found nothing in the manual.

Nope, once installed create a Joomla content top level category or section (depends on Joomla version) to house all your blogs. Then create categories within that top level category or section and these categories will be the categories users select when making a blog. Now navigate to CB > Plugin Management > CB Blogs > Config > Blogs > CMS and select the top level category or section you created for "Section". That's it, now go to the Blogs tab on profile and you can create blogs freely.

Am I correct in guessing that K2 categories would not available for the CMS "section" choice?

It works the same way in K2. Create a top level category then create sub-categories. Now select the top level category as the Section within CB Blogs (ensure model is set to K2, saved, then select Section). Example category setup.

Blogs
- General
- News
- Sports

Select "Blogs" as the "Section".

CB Blogs isn't a part of CB Core. When it is then we'll have proper documentation for it.
