You can't currently hide a field from profile edit. You can only hide it from registration or profile view. Profile view has no affect on profile edit. CB 2.0 has a new parameter to adjust profile edit display. For now you'll have to use CB Privacy to hide a fields profile edit display.

Well you can hide it now if you want. You just need to install CB Privacy and set it to not have a profile edit display in the privacy parameters for the field.
