Sorry, but I did not understand what should I do. I would like to rename the alert message from "Error" in "Warning" and translate the text "Profile incomplete! Fields" in Italian "Profilo incompleto! Campi:"
You can't change it from error to warning without modifying the source code of CB Progress Field, which I can not advise you on as we do not support core edits. To translate it you need to add the string I've provided above to your Italian CB language plugin language.php file then translate it.

Sorry, can you explain where and how to insert it, because it goes in error (there is a precise syntax?).
Should I use the "DEFINE ();" or something else?

It's the CBTxt usage so it goes in cbteamplugins_language.php. See other strings in the file for proper syntax. Note for CB 2.0 it's just language.php.
