Reinstalling Activity did not solve the problem. Can I just move the "Lib" folder to the CB Components folder? Should I just delete everything and start over?

I've no idea whats happened to your install then. Did you install CB 1.x over CB 2.x? If CB Activity is unpublished try publishing it to see if the issue goes away, but it shouldn't really matter as it's a library that autoloads.

Problem resolved!!!
Downloaded CBActivity plug 3.0.0_rc.2 which was a later version than I previously downloaded rc.1.
The newer version resolved the issue.
This great, I can get back to configuring the other plugin(s).
