Am I right in understanding that if I set the Joomla Global Configuration - Server - Mail Settings - Send Mail to 'No' that this will also stop all CB emails?
Yes.
What can I do just to stop CB emails?
We do not have a parameter to specifically turn off CBs emails. I've added a feature ticket for this.
Could I please have a simple solution before I go to bed?
We don't have one. As I've already told you in my previous replies we have no feature to turn off CB emails globally and specifically for CB.
If this is not possible then how can I add an unsubscribe link to CB emails?
You can't, there is nothing to unsubscribe from. CB is not a newsletter extension. It'd depend entirely on the usage. GJ for example you can set your self to be notified on a group by group bases by visiting the Notifications page of each group. CB ProfileBook notifications can be disabled via the profile edit parameters for its respective tabs.

Please ensure you've latest CB 2.x nightly installed. If you're on a release where that parameter wasn't respected then it won't turn off CBs emails. I've retested setting "Send Mail" to "No" within Joomla global configuration and appears to be working fine to display emails in all my tests. It will cause the mailer to throw an error with "The mailer function is currently not enabled.".
