This might be a styling issue. The text might be white. Try clicking below in that empty space to see if it fills out the To. If it does switch to Joomla's default Cassiopeia template and see if the issue goes away as it looks like you might have a custom template installed that might be coloring the elements text white.

You are right. When I switched to the default Cassiopeia template it did show up. I was able to make it appear again by adding the following to the override of the default CB template:
