If I use Profile book ratings as well/instead, I used to have an average rating field that showed the stars but I'm not sure how I got this. It's been deleted now - how do I get it back?

is it possible to display the results of the raw numeric output of the field to a specified number of decimal places?

You could use CB Query Field and query the database for the value or substitute it in. This would allow you to use MYSQL functions to format it if needed. As is CB formats it with a single decimal I believe so it'll always be for example 4, 4.5, 5.5, 6, etc..

I have figured out how to use CB Query to get the average figure for profile book ratings but am sure I used to have a star field type called something like 'pb_avg_rating' unless I'm going mad!

The CB ProfileBook rating field is "cb_pb_profile_rating". It's a calculated field so it doesn't store anything to _comprofiler. The votes are "postervote" in _comprofiler_plug_profilebook. You should just be able to use [cb_pb_profile_rating] substitution to give the digit average.
